Today's Snackshot is of crabcake eggs benedict. Eggs Benedict is typically made with Canadian bacon, plus poached eggs and hollandaise sauce, all on top of an English muffin. Try hosting an eggs Benedict brunch with a variety of options, like eggs Florentine (with spinach) or eggs Norwegian (smoked salmon). All varieties are delicious, but the crabcake Benedict will really make your guests drool.

Eggs Benedict

First, bring a pot of water to a boil. While the water&rsquos boiling, place a few English muffins halves and an equal number of Canadian bacon slices on a cookie sheet. Lightly butter the English muffins and place them under the broiler for just a few minutes, or until the English muffins are very lightly golden. Be careful not to dry out the Canadian bacon.

Now if you do not have an egg poacher you can poach your eggs by doing the following: With a spoon, begin stirring the boiling water in a large, circular motion. When the tornado&rsquos really twisting crack in an egg. Or two. Or three. The reason for the swirling is so the egg will wrap around itself as it cook, keeping it together. Cook for about 2 ½ to 3 minutes.

In a small saucepan, melt 2 sticks of butter until sizzling. But don&rsquot let it burn! Separate three eggs and place the yolks into a blender. Turn the blender on low to allow the yolks to combine, then begin pouring the very hot butter in a then stream into the blender. The blender should remain on the whole time, and you should be careful to pour in the butter very slowly. Keep pouring butter until it&rsquos all gone, then immediately begin squeezing lemon juice into the blender. If you are going to add Cayenne pepper this is the point at which you would do that.

Place the English muffins on the plate, face up. Next, place a slice of Canadian bacon on each half. Vegetarian variation: you can omit the Canadian bacon altogether, or you can wilt fresh spinach and place it on the muffins for Eggs Florentine, which is divine in its own right. Place the egg on top of the bacon and then top with a generous helping of Hollandaise sauce.

Note: To ensure that everything is hot at the time when it&rsquos ready to serve plunge the poached eggs back into the hot water just before serving, and make the Hollandaise at the very last minute.

Spray 9x13-inch baking dish with cooking spray.

Whisk eggs, 2 cups milk, green onions, onion powder, and salt together in a large bowl until well mixed.

Layer half the Canadian bacon in the prepared baking dish. Spread English muffins over meat and top with remaining Canadian bacon. Pour egg mixture over casserole. Cover baking dish with plastic wrap and refrigerate overnight.

Preheat the oven to 375 degrees F (190 degrees C).

Sprinkle casserole with paprika cover with aluminum foil.

Bake in preheated oven until eggs are nearly set, about 30 minutes remove foil. Continue baking until eggs are completely set, about 15 more minutes.

Whisk hollandaise sauce mix with 1 cup milk in a saucepan. Add margarine and bring to a boil, stirring frequently. Reduce heat to medium-low, simmer, and stir until thickened, about 1 minute. Drizzle sauce over casserole to serve.

Crab Cakes I’d like to say that I did great research to find the most incredible Crab Cake recipe or that I make Crab Cakes on a regular basis and this is my original recipe. But instead I found this wonderful recipe right under my nose. I picked up the can of Old Bay seasoning to check the sodium content and low and behold I found a crab cake recipe. I figured the good folks at Old Bay knew a thing or two about Crab Cakes. Why reinvent the wheel. Having said that, I was determined not to go to the grocery store, but instead work with ingredients on hand. We subbed some crushed Ritz crackers for fresh bread crumbs and chives for parsley. These Crab Cakes were delicious. Mostly crab, just enough binder and crumbs to hold them together, wonderful buttery edges…. And they were beautiful too. That looks good. We went with the sausages, brisket and ribs. You would've liked the "extreme" sausage, great chili flavor building into a mouth-filling heat. He smoked ghost pepper and added a few drops of pure cap.

I should've picked up a few extra links to go.

Those ribs are some of the best I've had in a restaurant, and the brisket's no slouch either.

Can You Eat Eggs Every Day?

Eggs have gotten a bad reputation over the years because they contain cholesterol. A large egg contains about 185 mg of cholesterol, and the recommendation from the American Heart Association (AHA) is a limit of 300 mg per day.

So, should you limit your egg intake? The answer is essentially no. The recommendation from the AHA can be confusing, and here is why. It assumes that when you eat more cholesterol from food, your blood cholesterol increases. But, your body actually doesn’t work that way. The research consistently and reliably shows that the cholesterol you eat has very little impact on how much cholesterol is in your blood.

Your body actually makes its own cholesterol. Lots of it, in fact. Every single day you produce between 1 and 2 grams of it on your own. (That’s 5-10 times the cholesterol in a large egg.) When you eat more cholesterol from foods like eggs, your body produces less of it. And when you eat less cholesterol, your body produces more. Cholesterol is actually really important in your body. It is in every outer layer of all your cells. It’s a requirement for growth (in infants and adults). And it’s required for the production of many hormones.

The egg paranoia has been based on the old assumption that eating the yolks will raise blood cholesterol (and increase your risk for artery and heart disease). And even though the research has disproven the hypothesis — for most of the population — the medical community has been slow to reverse recommendations. Unless you have medical conditions where your doctor has advised decreasing your cholesterol intake, then eating eggs everyday is just great!
