Eggs Benedict is improved tenfold when made with crabcakes.
The Daily Meal's editors, contributors, and readers dig into some pretty great restaurants, festivals, and meals. There's not always enough time to give a full review of a restaurant or describe in depth why a place, its food, and the people who prepare it are noteworthy, so Snackshot of the Day does what photographs do best, rely on the image to do most of the talking.
Today's Snackshot is of crabcake eggs benedict. Eggs Benedict is typically made with Canadian bacon, plus poached eggs and hollandaise sauce, all on top of an English muffin. Try hosting an eggs Benedict brunch with a variety of options, like eggs Florentine (with spinach) or eggs Norwegian (smoked salmon). All varieties are delicious, but the crabcake Benedict will really make your guests drool.

First, bring a pot of water to a boil. While the water&rsquos boiling, place a few English muffins halves and an equal number of Canadian bacon slices on a cookie sheet. Lightly butter the English muffins and place them under the broiler for just a few minutes, or until the English muffins are very lightly golden. Be careful not to dry out the Canadian bacon.
Now if you do not have an egg poacher you can poach your eggs by doing the following: With a spoon, begin stirring the boiling water in a large, circular motion. When the tornado&rsquos really twisting crack in an egg. Or two. Or three. The reason for the swirling is so the egg will wrap around itself as it cook, keeping it together. Cook for about 2 ½ to 3 minutes.
In a small saucepan, melt 2 sticks of butter until sizzling. But don&rsquot let it burn! Separate three eggs and place the yolks into a blender. Turn the blender on low to allow the yolks to combine, then begin pouring the very hot butter in a then stream into the blender. The blender should remain on the whole time, and you should be careful to pour in the butter very slowly. Keep pouring butter until it&rsquos all gone, then immediately begin squeezing lemon juice into the blender. If you are going to add Cayenne pepper this is the point at which you would do that.
Place the English muffins on the plate, face up. Next, place a slice of Canadian bacon on each half. Vegetarian variation: you can omit the Canadian bacon altogether, or you can wilt fresh spinach and place it on the muffins for Eggs Florentine, which is divine in its own right. Place the egg on top of the bacon and then top with a generous helping of Hollandaise sauce.
Note: To ensure that everything is hot at the time when it&rsquos ready to serve plunge the poached eggs back into the hot water just before serving, and make the Hollandaise at the very last minute.

Happy Father’s Day & Eggs Benedict One year ago, on Father’s Day, I published my first post on Lemony Thyme. A website only I knew existed, I was writing to myself. It was scary intimidating at first. I had no real plan other than to bottle my creative passion in one neat and tidy place. A somewhat private place where family and friends might visit. That’s what I thought and hoped for a year ago. Today as I write this, I see Lemony Thyme as anything but ‘bottled’ or contained. I’m a bit random in my recipe selections, I hope in a good way. And am quite inspired by the thousands of visitors to our page, so ‘private’ is out the window. What I do hope remains in the coming year is an intimate feel without too much personal. You’re never going to know if my washing machine breaks, unless of course it floods my kitchen. But I will continue to share ‘me’ with you. After all, this is my neat and tidy place with lots of room for family and friends to visit. I hope you’ll continue to do so. Flashback June 17, 2012 We gave Dad a choice this Father’s Day go out for brunch or brunch at home. Brunch at home won hands down and so it was declared….We shall have Eggs Benedict! Works for me. This was also a chance to cook with my kid, who I adore and am inspired by on so many levels. Her 2012 #1 resolution was “to learn how to cook and enjoy doing it.” To date her What’s for Dinner, Jr. album on fb has 99 food related pictures reflecting her vegetarian & healthy choices mingled with amazing muffins & cookies. I hope she’ll guest post for me some day soon! Eggs Benedict gives you so many options: choice of bread or other platform ingredient, a favorite protein or veggie middle, a gorgeous egg cooked your way, all topped off with a splendid sauce. We stayed fairly true to the original version using an English Muffin, in our case crisp bacon (option #1) or homemade crab cake (option #2), topped with a poached egg, and finished with Hollandaise sauce. For the Hollandaise sauce… 1 Tbl. fresh squeezed lemon juice 1/2 cup melted butter (1 stick ya’ll) Pinch cayenne & pinch salt While I have made Hollandaise many times before (some that turned out great and others that turned out to be scrambled eggs) this would be the first time for my daughter. And so I recommended to her and I do to you as well, gather all ingredients and have them ready. Once you get started it happens quickly. Bring water to boil in small saucepan then reduce to lowest setting (not simmering). Whisk egg yolks and lemon juice in small stainless steel bowl until thickened and light yellow in color. Then place bowl over saucepan and continue to whisk egg yolks briskly while pouring in a slow stream of the melted butter. Add the 2 Tbl. hot water and whisk until nice and thick. Remove from heat stir in cayenne & salt. Serve immediately (keeping warm can be tricky – but if you need to, do so slowly over hot water bath). Crab Cakes I’d like to say that I did great research to find the most incredible Crab Cake recipe or that I make Crab Cakes on a regular basis and this is my original recipe. But instead I found this wonderful recipe right under my nose. I picked up the can of Old Bay seasoning to check the sodium content and low and behold I found a crab cake recipe. I figured the good folks at Old Bay knew a thing or two about Crab Cakes. Why reinvent the wheel. Having said that, I was determined not to go to the grocery store, but instead work with ingredients on hand. We subbed some crushed Ritz crackers for fresh bread crumbs and chives for parsley. These Crab Cakes were delicious. Mostly crab, just enough binder and crumbs to hold them together, wonderful buttery edges…. And they were beautiful too. I served them with a simple remoulade sauce and we enjoyed them for lunch. I think I’ll add these to my holiday hors d’oeuvres spread, but make them silver dollar sized. Carso Mediterranean Grill

I love chicken and waffles. But we do ours as chicken and gravy over a savory waffle. But, I could dig into those.
Three Dogs BBQ, I am a little partial to biscuits & gravy with a side order of fried chicken. Fried chicken goes with anything.
chicken and waffles are my friend. )
That looks good. We went with the sausages, brisket and ribs. You would've liked the "extreme" sausage, great chili flavor building into a mouth-filling heat. He smoked ghost pepper and added a few drops of pure cap.
I should've picked up a few extra links to go.
Those ribs are some of the best I've had in a restaurant, and the brisket's no slouch either.
We bundled your breakfast for you.
Bundle #1: Eggs Benedict Bundlebatch
Whether you eat Eggs Benedict only on special occasions or you eat it for every meal of every day, Eggs Benedict is pretty cool to prepare — hollandaise sauce is, after all, one of the five mother sauces in French cuisine. And it's an emulsion. How often do you get to emulsify something? To honor emulsion, we created the Eggs Benedict bundle.

Bundle #2: Yogurt & Granola
Sure, yogurt doesn't have the panache of hollansaise sauce, but it doesn't need panache — yogurt is yogurt, man. Besides, our market-made granola has plenty of panache.

Can You Eat Eggs Every Day?
Eggs have gotten a bad reputation over the years because they contain cholesterol. A large egg contains about 185 mg of cholesterol, and the recommendation from the American Heart Association (AHA) is a limit of 300 mg per day.
So, should you limit your egg intake? The answer is essentially no. The recommendation from the AHA can be confusing, and here is why. It assumes that when you eat more cholesterol from food, your blood cholesterol increases. But, your body actually doesn’t work that way. The research consistently and reliably shows that the cholesterol you eat has very little impact on how much cholesterol is in your blood.
Your body actually makes its own cholesterol. Lots of it, in fact. Every single day you produce between 1 and 2 grams of it on your own. (That’s 5-10 times the cholesterol in a large egg.) When you eat more cholesterol from foods like eggs, your body produces less of it. And when you eat less cholesterol, your body produces more. Cholesterol is actually really important in your body. It is in every outer layer of all your cells. It’s a requirement for growth (in infants and adults). And it’s required for the production of many hormones.
The egg paranoia has been based on the old assumption that eating the yolks will raise blood cholesterol (and increase your risk for artery and heart disease). And even though the research has disproven the hypothesis — for most of the population — the medical community has been slow to reverse recommendations. Unless you have medical conditions where your doctor has advised decreasing your cholesterol intake, then eating eggs everyday is just great!
