EASTER 2021. Recipe for lamb with rice
Lamb organs (spleen, liver, kidneys, heart)

Method of preparation:
The organs and the lamb are washed and cut into pieces. Boil for 20-30 minutes. Then drain the water and leave to cool.
Boil the rice in ice water with salt, then drain the water and leave to cool. Finely chop the green onion, green garlic, parsley and dill leaves.
The organs and lamb are passed through a mincer, then mixed with rice, onions, garlic, dill leaves and parsley. Add salt and pepper to taste and then add the beaten eggs and mix well.

Cut the dried onion into cubes and fry in oil, then leave to cool, then add to the mixture together with beaten eggs, salt, pepper, finely chopped greens and a little juice from the entrails stew.
Mix the composition well, grease a cake pan with oil, pour half of the composites, put boiled eggs in the middle. Cover with the rest of the composition. Put in the oven and when it starts to brown, remove and grease with a beaten egg. Continue to bake until well browned.

This gives this chicken fillet a special sweetness and taste. Dad sometimes adds even a little leurda. Leurda is a wild garlic and is extremely healthy and tasty. You can put your favorite greens or the ones you have available.
You can grind the ingredients with a knife, as I did, or you can pass them through the mincer. I like this chicken fillet to have texture, so I use the knife. The composition obtained is mixed with raw eggs that will bind the liver. For the appearance, I added boiled eggs in the middle, but you can also omit them without any problems. Bake the dough at 180 degrees for about 40 minutes or until browned on top. Serve this cold drob as an appetizer for Easter meal, along with a little mustard. Lamb fillet, the traditional recipe
Ingredients traditional lamb drob
- organs from a lamb (liver, lungs, kidneys, spleen, heart)
- lamb's head
- 2 bunches of green onions
- 2 bunches of green garlic
- 2 bundles of fresh dill (or other greens you prefer)
- salt pepper
- 3 raw eggs
- 5-6 boiled eggs
How to make traditional lamb liver:
In order not to get that dry and drowning drob, the secret is to harden the ingredients, instead of boiling them. Cut the onion and garlic into rounds and put them in a frying pan with a little oil. After you have suppressed them for a few minutes, add the entrails in order: the heart, lungs and spleen, then the kidneys and liver, which cook much faster. Leave everything on the fire for another 10-15 minutes, until everything is soft and tender, but not dry. Then season with salt and pepper and chop finely, with a knife or a mincer, as desired. Add the raw eggs and the finely chopped greens, mix everything well until you get a homogeneous paste. Place the breadcrumbs in a cake pan, distribute half of the mixture in the pan, then place the boiled eggs lengthwise. Fill with the other half of the mixture and pull over the edges of the powder to completely cover the liver. Put the tray in the oven for 45-50 minutes at 180 degrees.
Before you start chopping or passing them through the machine, the lamb's organs are washed very well with cold water a few times. You need to remove any traces of blood and fat.
The kidneys can be harder to prepare and clean. That is why, before being chopped, it is recommended to wash with vinegar. Leave the kidneys in vinegar for a few hours, then after you have managed to eliminate the smell, boil them in cold water for 30-40 minutes.
Chop then grind the organs with a knife. The lamb is boiled and finely chopped, using a knife or through a mincer to obtain a finer grain. In the soup in which the meat was boiled, soak the white bread for a few minutes.
