  1. Preheat oven to 220 C / Gas 7.
  2. Rub pork fillet with honey mustard and thyme.
  3. Combine carrots, fennel and onion in a baking dish; season with salt and pepper.
  4. Roast vegetables in the preheated oven for 45 minutes. Nestle the pork in the centre of the vegetables and cook until pork is cooked through, about 25 minutes. Thinly slice the pork loin and serve.

I went to a friend’s place for a cookout a few years ago and discovered pork tenderloin. Up until then, I had always had pork as chops or ham. I was amazed at how tender, juicy and tasty this cut was. And it was so easy to cook! The version I had was pre-seasoned, but I’ve found it’s very easy to season myself. I love garlic, and I cook it in just about everything I make. Here is one of my favorite recipes for Roasted Pork Tenderloin with White Wine, Garlic and Rosemary. This is a simple marinade and tastes great whether it’s marinated for a few hours or overnight!

Tips for Slow-Roasting Pork Shoulder

  1. Use Pork Butt: Pork butt is not really the rear-end of the pig but rather the upper part of the shoulder. The actual rear-end is the ham.The pig is broken down into large sections or primals. You can see a drawing I did of them below. The mid section on top is the loin, and the under belly is the spare-ribs and belly (that&rsquos where bacon is from.) The shoulder has two parts, the picnic shoulder on bottom and the shoulder butt. This Shoulder Butt or Boston Butt is the part of the pork that we&rsquore going to use today. I chose the butt because you can get a nicer boneless roast out of it. I wanted this recipe to be as easy as possible. You&rsquoll probably have to go to a good meat counter to get the right thing. Ask for a 4 ½ to 5 ½ pound boneless pork butt. I ordered mine in advance, and specified that I wanted heritage pork. I know it is more expensive, but I think it is really important to buy heritage. Not only is it more humane and more earth friendly, but the meat tastes better and often has better marbling.
  2. Marinate: Marinating the meat for 12 to 24 hours before slow roasting the pork will make the meat taste very savory and reminiscent of Italian Porchetta. I used a combination of lemon, grated garlic, fennel seeds and rosemary. I like to use a 2-gallon Ziploc to minimize the mess, but you can do this covered in a large bowl or casserole dish, and keep it refrigerated.
  3. Roast Low and Slow: Pork butt is naturally very tough, but if it is cooked slowly it will become very tender. The meat comes from a part of the animal that does a lot of work and has a lot of connective tissue, so that means that the roast needs time. What happens is the natural collagen in the meat will break down into gelatin. In other words, pork will get tender after cooking slowly at a low temperature for a long time. The key is to not do it so fast that the meat seizes and thus squeezes out the moisture. In a home kitchen, a 300 degree oven is just right. Depending on your roast the meat can take any where from 5 to 7 hours.
  4. Test for Doneness: To test for doneness it&rsquos all about feel. Start checking if the meat is done at 5 hours. The way I do this is with a fork. I just push the fork down into the meat as far as it will go, then pull it out. If it meets any resistance, the pork roast can probably cook a little longer.
  5. Rest the meat: I found that there was a really broad range of how long this took to cook, and there was no rhyme or reason to when it would take 5 ½ hours and when it would take 7 hours. If you are worried about planning out your holiday meal to start at a specific time, the good news is that this slow roasted pork shoulder will rest really well for as long as you need it to. If you happen to have a cooler, that&rsquos a great place to keep it nice and warm. Wrap it in foil, then place it into the cooler, and swaddle it with clean kitchen towels for more insulation. I know this sounds strange, but this is actually really effective. At a minimum rest the meat 15 to 30 minutes tented with foil.

Preparation

It’s been a while since my last Cookbook Challenge Recipe, and I apologize but I’ve had a lot going on around here since I posted my last recipe. I hope you are all going through you cookbooks that may be collecting a little dust on your bookshelf and finding some fun new recipes to work on. I did with this one.

I defrosted a couple of pork tenderloins and was looking for something “quick and easy” to prepare with them. I started leafing through a bunch of my cookbooks until I found one that looked interesting.

I have no idea where I purchased this cookbook, but it is the companion to Chef Brehier’s PBS cooking series, Incredible Cuisine back in 1998 for Time Life and was their best selling cookbook for two years. Although Amazon doesn’t stock his cookbook, it is available from one of their “sellers” at greatly reduced prices.

I have not cooked from this cookbook in a long, long time, but I remember when I did the recipes were easy to prepare and the dishes were always delicious. I’m sure I thought to myself that I need to cook more recipes from it, but then put it back on the shelf and forgot about it.

Not sure how my kids would like the tangy citrus marinade, I decided to just marinate one of them and roast the other with just a little olive oil and salt and pepper. Turns out I could have marinated both tenderloins because the kids enjoyed both.

I say this is a quick and easy recipe, and it is, but you do have to allow time for the meat to marinate. Chef Brehier says at least 4 hours. I served the pork with rice and steamed asparagus, but mashed potatoes and any of your favorite vegetable side dishes would be great too.

There were a couple of procedures described in Chef Brehier I wasn’t sure of so I adapted it so it made more sense to me. This recipe is worth a try.

Pork belly. for years the forgotten part of the pig, it is now making regular appearances on menus along with lamb shanks and shin of beef, it is beginning to upstage the old faithfuls of sundried tomato and rocket. Or at least it is right up there with them. And rightly so, because slow-cooked pork belly is delicious: the crunchy crackling and the meltingly tender meat are a winning combination.

Jamie's recipe for the pork is fairly standard: rub it in fennel salt and roast it briefly in a hot oven to set the crackling off, then turn the oven right down and cook it slowly to tenderise the meat. But Jamie's recipe takes the fennel theme further: the pork is cooked on top of fennel bulbs tossed in thyme, olive oil and garlic. After an hour, add a bottle of white wine to the tray. The wine and the garlic, thyme and fennel make for a delicious sauce, which flavours the meat as it cooks. The meat emerges beautifully tender, the crackling sublime and the 'gravy' a winey, garlicky jus.

Apparently fennel is an acquired taste - in which case more people should try to acquire it. I love it, and it works fabulously with pork (Jamie has a recipe in Happy Days for a fennel and salami pasta dish which is also delectable).

As an aside, I'm making muesli tonight. Not a Jamie recipe. I've tried a few variations - from Nigella from Tessa Kiros from Bill Granger, the God of Breakfast and Brunch. This one is another variant from Bill - with dessicated coconut, oats, almonds, sesame seeds, pumpkin seeds, sunflower seeds, apple juice, and a bit of vegetable oil, plus dried blueberries. Some muesli recipes contain so much sugar that you might as well just have a doughnut for breakfast. Some might argue that life is too short to toast your own muesli and perhaps they would have a point, except that to make your own muesli you simply toss all of the ingredients bar the dried fruit together thoroughly, spread onto a baking tray, bake for half an hour, and decant into a jar, where you toss in the dried fruit to mix. How easy is that? and yet it is another way of making the kitchen smell wonderful, and making yourself feel like a domestic goddess, with minimal exertion and to maximum effect.
