Tochitura- my recipe

Washed and dried meat with a kitchen towel cut it into cubes, cut the sausage about an inch and cut the kaiser. Finely chop the onion. I put a pan with butter on the fire and when it has melted I add the meat that I stir a few times to change its color. I immediately add the onion that has the same fate. When it has softened a little, pour the water over the onion to cover the meat for almost three quarters and the wine, then cover the pan with the lid and let it boil for about 30 minutes.

In the meantime, mix more from time to time and if the water drops too much, I add more boiled water. Then I add the sausage and the kaiser in the pan, which I let them boil for about 5 minutes. After that I salt, pepper, put the crushed garlic and the tomatoes cut with broth with everything. Put the lid on the pan again and let it boil for about 1/2 hour, taking care to mix it from time to time in the pan. When it has dropped enough and the meat is well done, add the greens (basil, marjoram and parsley).

During this time, I also prepare the polenta, which will be ready with the tochitura.

Now everything is ready to serve. Good appetite!
