If we take an uncooked frozen belly, let it thaw. We boil it for 2 hours or even longer (depending on how old the cow is) until the fork enters it. We take out the belly and cut it into slices like homemade noodles.
We take care of the carrots, we clean them, we put them on the small grater and we heat them in 500 ml of oil until they soften, then we add the garlic, we leave them on the fire for another 3.4 minutes.
We strain the carrots on a small sieve, we also take the juice from where the belly boiled to wash the carrots. The juice obtained is poured over the other juice where the belly boiled. Separate the yolks from the egg whites. Beat the yolks with a whisk until the volume increases a little, then gradually add the cream over the yolks.
We incorporate them easily, stirring with the aim in the juice from the belly. We also turn over the sliced belly, we taste salt and lemon salt.
