Spinach food

I don't know how It has happened that, until now, I have not posted on the blog the spinach food recipe, which I could consider one of the dishes of my childhood. I probably thought that a post in this sense is not justified, because, isn't it ?, everyone knows how to make spinach food, as they know how to make beaten beans or potato food. I realized, then, that such a post is still needed, at least so that those interested can see quantities or an idea of service. In addition, there are many who prefer to browse the internet than the cookbook or the notebook, yellowed, of the mother or grandmother. That being said, this is how I eat spinach. Nothing spectacular, rather classic, without unnecessary & # 8220flowers & # 8221. Only when serving, if you want to prepare spinach food for a more pretentious meal, I recommend that, after you finish it, distribute it in ramekins or individual clay pots, break an egg on top and put in oven for a few minutes.

Before going on to detail the & # 8220sea & # 8221 recipes, let's see how to clean the spinach: remove the old leaves and, possibly, if they are woody, cut from the stems of the leaves. Wash the spinach very well, leaf by leaf, under running water. For efficiency, fill a large bowl with water, immerse the spinach, leave it for a minute or two (soften the dust and other impurities, which will accumulate at the bottom of the bowl), then start washing it, under running water, taking a handful of leaves and rubbing them lightly between the palms.

Ingredients (for 4 people):
& # 8211 cleaned spinach 1 kg
& # 8211 green onion 6 strands or dried onion 1 pc. big
& # 8211 garlic 3-4 cloves (10 g)
& # 8211 butter 20 g
& # 8211 flour 1/2 tbsp
& # 8211 milk 150 ml
& # 8211 salt, ground pepper

Bring more water to a boil in a large pot. When the water boils, put the cleaned and washed spinach and leave it for a minute. Drain it and pass it quickly under a stream of cold water (the color is refreshed). Drain the spinach, then chop it with a knife. Heat the butter in a large saucepan or pan. Saute the onion (cut into slices, if it is green, small, if it is dry), then add the garlic passed through the press. Add the chopped spinach and leave for about 2 minutes, stirring often. Add the flour, stir to incorporate, then pour the milk. Let it simmer for a few minutes, during which time the sauce thickens.

Season with salt, add ground pepper. If you make food for the family, it's ready! You can make one or two scrambled eggs, put them on top, over the spinach mound and serve. But if you want to pamper your guests with a portion of delicious spinach, heat the oven to 220 degrees Celsius, divide the food into individual dishes (clay or more modern ramekinuri), break an egg on top and put in the oven. Leave for about 7-10 minutes or until the egg whites have coagulated. Sprinkle with salt and ground pepper and serve with a slice of bread on the hearth!

The fish is cleaned and washed well, the tail, wings and head are set aside, sliced and salted on both sides. Mix the flour with the malai, roll the fish on one side and the other in this mixture, leave it on a plate for about 10 minutes until the malai hardens on it (not to spread in the pan), then fry in oil heated to the right heat. I served it with lemon slices, garlic paste and hot polenta.

What is Quinoa?

Quinoa, the ancient cereal or pseudocereal, is a nutrient dense food, a complex protein that contains all the essential amino acids, unlike wheat, rice and other grains whose component lacks one or more amino acids.

It comes with a rich history, considered by the Incas sacred and called ‘the mother of all grains‘.

Quinoa is an old plant dating back 7,000 years and originates in the mountainous parts of South Africa.

Considered a pseudocereal, it is grown for its edible seeds.

Quinoa seeds are flat, oval in shape and usually pale yellow in color, but the color can range from pink to black and the taste can range from bitter to sweet.

The bitter taste of these seeds is richer in antioxidants than the sweet one, but both types are good for health.

Only when it assumed the status of ‘superfood’ did it become known beyond the borders of South America and in our country. 2013 is declared the year of Quinoa by the UN. Now it is common to find quinoa in specialty stores and districts but also many products based on or with quinoa.

Where the calories come from is as important as how many calories you consume

A well-balanced and healthy diet includes whole, unprocessed foods.

At every meal, you should eat foods high in protein and high quality fiber.

Example: fruits, vegetables, lean meat, fish and whole grains.

Quinoa with fried egg, avocado, spinach and spicy butter sauce - Recipes

I'm tired of the same fish fillets with the same bland taste. I wanted something more complete, to feel like it was fish, but at the same time not to bother with the evisceration and not to have to choose the bones with a magnifying glass when the hunger is greater. :)) And I remembered the little anchovies from Customs, our daily lunch last summer at sea. I didn't find the hams in the supermarket, but I found the sprot. Still there, right?

N e c e s a r e:
500g sprot
1/2 cane faina de malai
sunflower oil
granulated garlic.

P r e p a r a r e:
The only preliminary preparation was to decapitate the fish. Then I cleared the trunks a little under a stream of water. I didn't wipe them, but I left them a little damp to stick the flour on.

Then I seasoned the sprout to taste with salt and pepper. I rolled it in corn flour.

I fried the fish in oil over a moderate heat on one side and on the other for a few minutes, not many, until the corn was golden. Pay close attention to their return as the flour peels off.

I took out the fish on a paper napkin to absorb the excess oil. I then sprinkled granulated garlic. You can serve the sprat in corn as such or with various garnishes or seasonal salads.
